Observations and Evaluations - Consultant Evaluation Rating: 2.4 Adequate <br />• Dry storage is adequate for facility size and deliveries received twice per month. <br />• Freezer and walk-in space is sufficient, however opening and closing the doors too often can cause <br />the condenser to freeze. <br />• All ovens, two refrigerators, and one blast chiller are original and in good working order. The Jail has <br />been experiencing problems with the dishwashers having adequate drainage. One steamer has been <br />out of service for quite some time, and the pressure cooker was out of service at the time of this <br />assessment. <br />• The original tray conveyor broke shortly after construction was completed, but the attached chillers <br />are still in working order and are utilized. <br />• The bakery is no longer being utilized as the current inmate population cannot support its use. The <br />proofer, mixer and bakery oven are out of service. <br />• The outgoing staging area (Room 1163) is a secure room being used for kitchen storage.
