California 92702 <br />TO: Owners and Managers of Food Service Establishments <br />FROM: FOG Control Program Manager <br />DATE: August 22, 2006 <br />SUBJECT: FOG Control Program and Issuance of Notice <br />IMPORTANT ANNOUNCEMENT <br />The City of Santa Ana (City) is responsible for keeping the sewer system in Santa Ana functioning <br />properly and has implemented a Fats, Oils, and Grease (FOG) Control Program to prevent blockages in <br />the sewer lines that can cause overflows and spills. This program is required by the State of California <br />and was initiated in the spring of 2005. <br />City inspectors have visited the food service establishments (FSEs) in the City during this past year to <br />inform personnel of the program requirements, review the facility's Food Service Establishment <br />Wastewater Discharge Notice (identifying FOG Program requirements), and to provide education <br />material. The City would like to thank all of the FSEs for cooperating with the City inspectors and for the <br />efforts that have been taken to make the program a success. <br />To verify the effectiveness of the FOG program and as required by the State of California, the City will <br />continue inspecting FSEs to ensure that they are in compliance with the requirements of the program. <br />These inspections will include adherence to Kitchen Best Management Practices (BMPs), proper <br />maintenance of grease removal devices, as appropriate, and review of FOG Program records. All FSE <br />documents/records, which may be located in a binder, must be readily available for review by the <br />inspector during the inspection. Additionally, the Orange County Health Care Agency (OCHCA) <br />inspectors will also be reviewing a portion of the FOG Program requirements during their inspections to <br />verify compliance. Food service establishments that are identified as non -compliant with the FOG <br />program requirements during these inspections will be re-educated on the requirements of the FOG <br />Program and will also have enforcement actions initiated, which may result in significant fines for non- <br />compliance - <br />Your cooperation and assistance in this vital program is greatly appreciated.
