GREASE INTERCEPTOR PUMPING -INTERVAL -REQUIREMENT INCREASE REQUEST FORM <br />CITY OF SANTA ANA <br />Fats, Oils, and Grease (FOG) Control Program <br />City of Santa Ana's (City) Fats, Oils, and Grease (FOG) Control Regulations, (Article III, Chapter 39, Section <br />39-56.8 of the City's Municipal Code) — states that grease interceptors shall be maintained in efficient operating <br />condition by periodic removal of the full content of the interceptor. Food Service Establishments (FSEs) shall fully <br />pump out and clean grease interceptors within a pumping interval such that the combined FOG and solids <br />accumulation does not exceed 25% of the design hydraulic depth of the grease interceptor. This is to ensure that the <br />minimum hydraulic retention time and required available volume is maintained to effectively intercept and retain FOG. <br />All FSEs with a grease interceptor shall fully pump out contents of the grease interceptor at a minimum quarterly <br />pumping interval (at least once every 3 months) unless the interval is increased based on procedures described below. <br />The pumping interval may be adjusted when sufficient data has been obtained to establish an acceptable <br />interval that will ensure compliance with the 25% rule. Based on the actual generation of FOG from an FSE the <br />pumping interval may be increased; however, the maximum pumping interval shall be no greater than 6 months. An <br />FSE may submit this request form to the FOG Control Program Manager requesting a change in the pumping interval <br />of its grease interceptor. ANY REQUEST WILL BE DENIED IF THE FSE IS FOUND TO BE, OR HAS BEEN, <br />IN VIOLATION OF ANY FOG PROGRAM REQUIREMENTS WITHIN THE 12 MONTH PERIOD PRIOR <br />TO THE DATE OF THE REQUEST. The FSE has the burden of responsibility to demonstrate that the requested <br />change in its pumping interval reflects actual operation conditions based on the typical FOG accumulation over time <br />without exceeding the 25% mle, and that it is in full compliance with Santa Ana Municipal Code, Section 39-56.8 and <br />the FOG Control Program. Upon determination by the FOG Control Program Manager that the requested increase is <br />justified, the FSE shall be notified in writing of the revised pumping interval. <br />Procedures for variance request: <br />1. FSE shall fill out and return this form. <br />2. A review of the FSEs program compliance history will be conducted. <br />a. If the FSE is found to be, or has been, in violation of any FOG program requirements within the 12 month <br />period prior to the date of the request, the request will be denied. <br />3. Once contacted by a City Inspector, the FSE shall coordinate an inspection schedule with the City Inspector. <br />a. Inspection schedule may include a monthly, exhaustive inspection of the grease interceptor for a 3 to 6 month <br />period. <br />4.
