FOG Control Program Manual <br />• No emulsifying additives for the purpose of emulsifying FOG without the written <br />approval of the FOG Control Manger <br />• No disposal of waste cooking oil into drains <br />• No discharge of wastewater in excess of 140 degrees Fahrenheit into grease removal <br />equipment <br />• No biological additives for grease remediation or use as a supplement to interceptor <br />maintenance without approval of FOG Control Manager (Appendix F, Additive <br />Request Form) <br />• No toilet discharge into grease interceptor <br />• No waste removed from the interceptor shall be discharged into the sewer system <br />• Dishwashers shall not discharge to, or be connected to, any grease interceptor or <br />grease trap <br />• Grease interceptors cannot be operated (must be pumped out) with FOG or solids <br />accumulation exceeding 25% <br />4.3.1.3 Rule 3 - Kitchen Best Management Practices (BMP) <br />Requirements <br />• Installation of drain screens <br />• Segregation and collection of waste cooking oils <br />• Disposal of food waste into trash or garbage, and not into sinks <br />• Employee training and refresher training every 6 months <br />• Frequent cleaning of exhaust filters and appropriate disposal of the waste <br />• Kitchen signage <br />• Absorbent material placed under areas susceptible to FOG spills <br />• Covered conveyance devices to transport FOG <br />• Emptying of FOG containers before they are full <br />• Spill kits <br />4.3.1.4 Rule 4 — Gravity Grease Interceptor Operation and Maintenance <br />Requirements <br />• Requirement for the installation of a grease interceptor <br />• Requirement for grease interceptor maintenance (FOG and/or solids cannot exceed <br />25% of the capacity of the interceptor) <br />• Frequency of grease interceptor maintenance (minimum quarterly [once every 3 <br />months]) <br />4.3.1.5 Rule 5 — Hydromechanical Grease Interceptor (HGI) Operation <br />and Maintenance Requirements <br />• Operation in accordance with manufactures requirements <br />• Requirement for HGI maintenance to ensure efficient operation (removal of <br />accumulated FOG, as needed) <br />• Frequency of HGI maintenance (minimum monthly) <br />19F-189 8 <br />
